They did but there have been numerous workarounds found since.
There's a mining program that unlocked them to about 80% mining power but I may have that value slightly wrong.
I still have a 1060 6GB so yeah, a 3060 should last quite a while.
There are some programs that take out the difficulty and are basically just one click but I don't know how good they are.
Yeah here's one just as an example.
Not sure if it lets you pick the mining pool but the GUI is extremely basic. Enter a wallet address and hit "start mining", that's basically it.

As for snapshot's vs backups, snapshot protect you against a subset of what backups protect you from, but are easier to recover.

Having windows contained on it's own disk / partition table helps a lot here.
Windows can do what it wants and you just boot into it via grub which can probe it just fine.
