the AW2725DF was a beautiful monitor but you couldnt adjust the brightness unless you turned off hdr

and even after you change it in sdr and go back to hdr the setting just resets

but someone in here had linux and was able to change the brightness while in hdr

Yeah honestly had so many random issues it was so time consuming, not worth it honestly. After dealing with it for about 2 months I just went back to nvidia.

All I can say is I have seen no trend in AMD vs Nvidia issues personally. Apart from my gtx-1080 on linux being a bit of a pain, and the 7900XT's linux drivers having some rough edges at the start.
When I was still running windows GTX 1080 had no better or worse drivers than my HD 7950 which sure died but did so after running a pretty strong overclock for 5+ years.

I did that like 20 times, even reinstall windows, plus it was a 100% new pc. The main issue was random gray/green screen while playing anything, it would happen randomly every 20-60 mins. I also tried over clock, under clock, a lot of things i found online.

^ the computer will continue running but no video at all. After 2 replacements I just got rid of it and got a 4090, reinstalled windows and never had an issue since then.

I personally found that for a decent jellyfin setup personally the igp on my 8700k was plenty. and definitely saves power on a server not to have a gpu attached. adds up 24/7.

1080 is a pain on Linux because it uses old drivers there, so Vulkan performance is abysmal, and newer drivers are only available for 16/20-series and newer cards
For GPU encoding you'd be way better off with some Intel Arc GPU, even A310 will do better than 1080
Also Unraid sucks
