Happend very frequently, it's normal, sometime CPU power draw spike for half a second or many second when doing a heavy task like opening a game for exemple wich cause a big temps increase, so your fan go up in speed then decreased rapidly because it was just a short temps rise and not a big and constant rise 😅

Very normal temps but you will see a bigger change in temps with longer session of gaming, it's not accurate to test temps for like 5min 😅
If the sound of your fan is still too loud for your liking you can continue tweaking them until your satisfied (FanControl will help you a lot with that)

Depend of your setup, like your fan, CPU, CPU cooler, GPU, computer case and also room temps can all have an impact on how you will make a fan curve
I would also make a curve only for my CPU, a curve only for my GPU fan and a curve only for my case fan that is based on the temps of the CPU and GPU

If you have filters then vacuum them

I dusted my laptop fans disassembled the whole thing and it was a no joke 50 degree diff when playing games

Also go through your app list and delete any unused apps

Also stop background apps that you don't need or want

There is also windows configuration and debloating scripts on github which might help as well

Make sure windows auto updates are on too

I got my 2nd moniter today and the display port is plugged into the gpu and moniter

And it’s not turning on, I have 1 more cable and it’s this, I think it’s the power cable but I really don’t know where I’m supposed to plug in the end part
