The problem is writing an ui to handle everything, steamos heavily relies on Steam as an interface for everything to work.
If you are not using steam you have to basically write your own handheld ui.

My main concern with windows on a handheld (I have never tried it) for personal use at least.
Recovery from standby while a game is running (quite essential for my use), problems with random required updates (system is not online a lot and mostly lives in standby), standby battery life reliability.
Chance of random popups / crap causing problems in the background.
I personal preference for linux and the hope that windows fails in the handheld market.
