I'm late but, my eyes hurt at low framerates so i can kinda relate. Even if it's not the same.
Depending on the game, motion blur helps me. Running the game in a small window helps too. Anything to mask the jump between frames.
Might even help to intentionally cut off some of the screen with overlays to reduce juttering motion for your eyes/brain to parse.
Not a solution exactly, but gotta work with what you get, i s'pose.

And it's truly, awful
Game throws you an island right off the bat so I was like, shit I'll just settle on the island for now

Then build a ship and continue sailing
Well uh, the game doesn't work that way
You can't build on island, and worse off, you can't build another vessel
... while the one you just jumped off from just drifted away
So the game literally softlocks you
