Quests suck - If you so insist, sure, completely disregarding the vast variety of quests that actually exists. You are still paying an RPG game so do whatever the fuck you want. Quests are just one of the activities in the game. If you don't like the vanilla quests, which are fun in their own right, just mod it and play Bruma or something. Still, there's little you can cram into a game like that, and vanilla quests carry their own weight.
Dungeons all look and feel the same - Same as saying "LoL plays out the same all the time, just destroy the enemy base, CS:GO has barely any gun variety, Age of Empires plays out the same. Fam it's an RPG, you play it the way you want to. There's plenty of content in dungeons to actually make them somewhat unique, albeit "the same", as you say. But something being still good even if it's the same, is still good.
Dragons bother too often - Dunno, maybe that's just on you but dragons aren't that common, neither are they all that powerful.
