So far (just done chapter 1 and just started chap 2 with some minor side quest) I can somewhat agree with the sentiment

Plus the control feels like there's a constant delay/weight on my movement and combat

What I dislike about DS3 is primarily how linear the game is. It's mostly straight forward. It also leads to builds being very similar to me at least until NG+ since I always come over the items in the exact same order. Best in series at this is obviously ER where so much is accessable from the very beginning

I always equate the Dark Souls games to Star Wars
Dark Souls 1 = the original trilogy, a true classic
Dark Souls 2 = the mixed reception entry like the prequels, tries new things for better or worse
Dark Souls 3 = the Disney trilogy, plays it safe and boring

Feels too much like a repeat of 1 in many ways, such as undead burg mirroring the high wall of Lothric
The linearity badly affects how I end up building my characters since when most of the game has you take the exact same path as every other playthrough you encounter weapons and armours in the same order leading to very similar builds unless you put it off for like half of the game until you get what you want. But unlike something like ER or to a lesser extent DS1 you can't necessarily «easily» run to these parts of the games, especially not in DS3 where it's so linear
All the DS1 references in general such as (spoilerz) ||Gwyn's theme + the entire final phase of the final boss||
Game looks kind of ugly imo

I don't hate the game or think it's bad. I just don't file it under the FS games I find good enough to the point I like them
