Ideally a game let's you use everything all at once, or locks you into one or the other.
But some games go "oh they put down the controller and want to use a keyboard instead, better change to that" back and forth once or more every single frame.

I do remember a few of these creatures, most prominently:
a fort in the freezing north, where nothing grew or was alive, except massive zombie invasions once in a while. the fort was sealed with a simple wooden trap door, except one time, the door was jammed open by a dwarf who discarded a stinky, worn sock on its rim. the (presumably frozen solid) sock spelled the end of the bunker fortress, and I watched in horror as the undead went from room to room, tearing apart the inhabitants, their pets and dragging the guts of children through hallways.
almost everyone was dead, except the mayor, who was meanwhile in the kitchen, cooking food, not acknowledging the nightmare occurring around her for a second
eventually, the necromancer commanding the army entered the fort. I quickly put her into the military, and had her impale the worthless sod on the end of a rock sword. he went down without a struggle, and the mayor continued her daily routine, stepping over detached limbs and organs, somehow ignored by the zombies
according to the character screen, she had a pretty good day

when the fort had finally rebounded and was all cleaned-up, I found mysterious corpses without a drop of blood in them, and then it dawned to me that my hero mayor was a vampire
it explained everything, but I could not stomach ending her own unlife, so I walled her into an opulent throne room with nothing but masterfully crafted furniture, where she remained for the rest of time
she was completely fine running the city from there. there were no more sock-related mass death events

the problem: ranged weapons are buggy as fuck in DF and having cool gun mechanics was kind of the major appeal for me lol
so I'll redo it when the game's fixed, it's more moddable and I can be assed to play it again

Unfortunately, a big plus for early access is that revenue starts immediately coming into the studio, and sometimes a game only has so much time to be made because they only have so much money to fund its development
can be solved by throwing more money at it (but it has to come from somewhere). can be solved by better forethought on planning for what you're actually able to develop in the span of time you have to make it. I think the studio got better at estimating how much time they need to make certain things over time for the same type of game

However it seems the devs really didn't want to develop the game, so they abandoned it after getting to the bare minimum state. On the other hand Terraria received a metric shittone of updates even after Starbound was left to die in the cold.

Long time ago extra skins were free earnables in games, then it became $1 microtransactions, now it's $20+ season passes that force me to do chores for the items I just purchased in that season pass. I will admit as much as I hated the earlier microtransactions, I was still fine with shelling out a dollar, but in hindsight I realized that just gave companies an excuse to increase those transactions to nearly the price of the game itself.
