you can always just make more skills for just one weapon or have more fantasy weapons that make sense to do different stuff but not require switching them
I guess I mainly see that you could just have 2 weapon sets in one without having to switch them so you can have the same variety but hide it in an ability/stance swap etc.

That is not the issue. The issue is cooldowns and keeping track of them between 2 diff weapon slots. I'm fine with combat that I get to choose what weapons to use. E.g daggers for up close and 2¨handed sword from further away. But there are random dev made abilities usually, that I don't like bcuz they are not realistic or otherwise too flashy, but I'm stuck to them because random developer decided each weapon has only 6 diff abilities coupled with cooldowns. It's too rigid there is no flow or reacting to what happens around you. It enforces TOO RIGID order where you press the skills - and it's always the same.

But the reason for weapon swapping in ESO/GW2 is not there. They are not used only in their specific range. They are used because you run out of cooldowns, so it feels arcadey/gamey

Regular throw shouldn't incur a CD imho. Only abilities should. So basically an ability that does white "regular" damage, such as regular "attack".. But I'm not sure if you've experienced those kinds of boring abilities that are spammable in your mmorpgs
I feel it's an UX issue too. In some games weapon swap has annoyingly long animation lock, then you're stuck with your throwing knife when someone rushes you and you're trying to switch back but can't. So you died because you fought against bad UX, rather than if it were more realistic you'd just drop the throwing knife on the ground and pull your knife when the guy was rushing you.
But ultimately devil is in the details. I'm sure a game can be made good in both ways. Just my past (personal) experience.
