Just so I have this correct cause I'm a bit confused now lmao
If I have freshly grown strawberries, and I get a contract for it, and I harvest one of them, will that complete contract?
IF yes, then can I leave the rest, roll for more contracts, and if I get strawberries again, I can pick one an additional time, and complete the contract once more?

Allotment patches and herb patches are counted as complete after the last instance is harvested. So in your example of strawberries, no. You need to harvest all strawberries until the allotment is clear then the contract is complete.
Sometimes my compost bin is 28/30 so I get 2 watermelons from an allotment patch to make it 30/30, if I roll watermelons as a future contract I can still get credit once I completely empty that patch.
As mentioned above this is different for patches that have the "check health" option on mouseover, those are completed when you do that.

So to follow your example, if you got a watermelon contract, then you did the 2 watermelons into your compost bin, but left the remaining watermelons, your contract wouldn't be complete because you need to fully clear the patch for the woman to be like "yeah you're done"
So in short, it's not possible to pick 1 watermelon to complete a contract, then get a back to back watermelon contract, and pick the same patch. Makes sense to me just wasn't sure when the contract was determined as complete for the patch
