I just heard this analysis I think you guys would like: Luffy's course over the story is that he starts off loving fighting, but he has to lock in as the adventure continues because the lives of his crew are on the line. He can't treat fights as just something he enjoys doing, and it's reflected in his Gears

They have drastic drawbacks. Gear 2 is actively killing him, and Gear 3 is good for a few shots before he's reduced to a state he can't fight in at all. G4 becomes more serious aesthetically, his expressions getting grimmer and angrier as well

That makes G5's payoff a reward for Luffy, where he can embrace the fun aspect of fighting again and it's why Luffy being dower and serious in G5 would just be reductive in the writing. It marks that Luffy has reached a level where he can treat fights exactly as he wants with the power to handle the responsility of his crew's lives

Bean you've talked about how Luffy told Kaido of all opponents that "this is getting fun" because it's the highest level fight he's had and that fits into this as well
