It depends on the "gimmick" as you call it. Oda varies widely on what haki can or cannot effect. Doffy has very strong haki, probably stronger than Law's and he would know about how to negate things. Law couldn't use chambres on Big Mom or Kaido, but many of his other abilities DO work. And not only attacks. He was able to trap Big Mom in a bubble and silence everything she said, and she couldn't break out of that via haki.
Haki and what it can break out of varies. DFs do have their own superiority when needed. Law's immortalty power would be pretty useless if you could just "break it with haki"
