In many cases, Oda examines the path through facing that trauma and evolving as a person--sometimes in a positive way and sometimes negative.

However, Hancock stays as she is. She's static. She's all potential and that's tossed away for the Luffy gag. And it's not even a good or unique gag.

S-Snake gets the gag because it's Luffy and she's Hancock, or they'd give the gag to the other Seraphim too. Several people make other requests of the Seraphim. Most of the time, they're pretty polite about it too.

Luffy's resolve grows once his fears are realised and his relationships with various people also develop throughout the series, resulting in him deferring to people when he wouldn't have been able to do that prior. But Luffy isn't unrecognisable. His core values don't completely dissolve for something else.

Zoro's do. Zoro's priorities do a complete 180 over the course of the pre-timeskip. He goes from threatening to kill Luffy should Luffy get in his way, to being willing to sacrifice anything in the name of his captain.

Sanji's obviously changed by meeting Luffy (but who isn't) and I'd love to write more here but I'm being pulled by real life. Just to keep it short, calling Robin into danger was another major step.

Side characters like Conis, Viola, etc. obviously change as the circumstances around them are altered radically by the events of the narrative. Some characters, like Law, get ridiculously impressive development.
