The thing is, the plot moves forward little by little. It is mostly focused on expanding upon the past. So there's tons of stories to read and experience. You can play some games, but they usually don't have a lot of plot, the best one being Space Marine, a 2011 game with a sequel coming out this year.
There's a couple of mini-series with stories from the 40k universe, and there's obviously the books. Many of these stories don't usually require previous reading, as you're basically exploring a world, unless they're specifically within an arc or series, where the books are sequential.
My absolute favourites are the Ciaphas Cain series, narrating the life of the most irrationally lucky man in the galaxy.
