The placeholder is actually %statistic_use_item. Unfortunately from what I understand this combines all the use types: using the item to craft, placing the item, etc. I believe this is how it gets the statistics from spigot. You would probably need a separate expansion for this and it would need to be installed from the start of the server to count everything.

There's also Ultimate Stats but that one is paid. Idk if it is worth 6 euros as I've never used it.

There seems to be this as well but idk if it actually has a mined blocks statistic: https://www.spigotmc.org/resources/playerstats.102347/. But it's free so you can try it.
