The player head component accepts a name, uuid or texture path. So the first two are not usable in this case and the third only would work with a resource pack to have additional textures.
And sprite also wouldn't work outside of using vanilla textures or a resource pack.

if you don't use a version manager yet then consider not using GitHub
there are alternatives like gitlab and codeberg and people praise them more for having less lock-in
I'm not actually too knowledgeable about it but you should do some research about alternatives and downsides of GitHub if you haven't committed to it yet
