well the difference is that your players connect via proxy and not directly to the server, you could probably do some filtering on the proxy side so that the server behind it doesn't get hit that much, apart from that I'm not sure if there are any more pros of doing that

the main reason I've seen servers use a proxy with one gamemode is for a fallback server. so if you need to restart your server for a quick update or it crashes, you can send players to your lobby rather than them getting kicked from the server completely. and you can send them back to your gamemode after automatically.
