Possible Solution Found:

DeluxeTags no longer requires an expansion! Go to plugins/PlaceholderAPI/expansions and delete the DeluxeTags expansion. Restart the server afterwards.

Barry's solution finder is still in BETA and will make mistakes.

Ok so I've installed MyCommand in order to put commands into buttons etc. But I'm struggling to figure out how to give money to the player pressing the button since Essentials asks for a username. I've noticed these asterisks tho, but don't know what they mean. I've tried them out and they both seem to give me money, but I don't have anyone else online atm to test if this is global or only for the player pushing the button

So quantity would be a pretty hard thing to add, but very possibly.
You'd want to most likely use a combination of deluxemenus meta placeholders to temporarily store a quantity amount with a menu that accepts arguments in like the item and cost.

meta can store data personal to the player and can be accessed via placeholders https://github.com/PlaceholderAPI/PlaceholderAPI/wiki/Placeholders#deluxemenus

If you had 6 buttons to control the quantity, let's say +1, +10, +64, -1, -10, -64

refreshing the menu upon click would update placeholders and view of quantity

You have another button for purchasing the items and one for cancelling/returning

How do you get a menu to open from one to another?? Trying to get my main menu to open a stats menu /stats opens the menu This is what I have right now

you'd have to set the randomTickSpeed to a higher value. but you should know that speeds up everything: how long days last, how fast animals grow, how mach plants grow, trees, etc.
