you can take a known volume and heat it to below boiling point for the alcohol to evaporate but not a significant quantity of the water and compare the volume

needs a thermometer so you can do something like a boiling point analysis - when the temperature stops going up something is being boiled off

 I've made many batches of mead over the years, as well as having several commercial examples of varying quality. Here's my run-down:

    Plain meads taste more like white wine than anything else. The sweetness level depends on the water/honey ratio as well as the yeast. Sometimes meads are stabilized and backsweetened.

    Fruited meads (melomels) taste like fruit wines . If you've added fruit to beers before, it's a similar effect but more pronounced due to more subtle base flavors.

    Spiced/flavored meads (metheglins) usually are made sweeter in my experience, and taste like whatever is added to them.

    Honey flavor usually isn't too pronounced unless a lot of honey is used or the mead is backsweetened with a lot of honey.

    Meads are way easier than beer brew-day wise, but are more finicky as far as fermentation management goes. Yeast nutrient is a must because honey doesn't really have non-sugar nutrition for the yeast, and the flavor profile doesn't hide flaws.

    Meads REALLY like age. I've found bottles I've forgotten about for 10+ years and several meh bottles have turned into something pretty good with time.

ive done several experiments with vodka and spices, just to see what kinda spicey drinks come out, and if it has a unique flavour on its own already, you can always soak some spices in there

vanilla (not essence but pod) is amazing

especially if coupled with a light sweetness

i also enjoyed cinnamon, though from my experiments you need quite a bit of cinnamon and it's a subtle flavour
-> note, ceylon cinnamon, not cassia, concentrated cassia is bad for the liver

i'd definitely adding back honey to see what it does with the taste

You need a combat system and based on what you showed off platformer and fighter game systems would be best to research that. A upgrade system either dmc or weapon based upgrades so you gain resources from enemies and then upgrade (important questions to ask yourself, do weapons retain upgrades or are they run specific if run specific, can I favorite the path of the tree i want so its not a pain to upgrade over and over and breaking the game flow). You said its a roguelike do you have the stage progression or path system planned out yet.
