i think the only effort ive put into a custom fan curve was essentially a silent one until it hit a certain temp, then itd turn to a jet engine and i got annoyed of hearing it

so while i am probs more knowledgeable in PC things than the average gamer im still a degenerate at heart and always will be. when first OCing my 5080 i maxed its clock speed to the point i couldnt even launch into windows without my pc black screening

your max boost for cpu/gpu is its max clock speed (typically when temps are low) so if your undervolting is slight enough to drop temps but not enough to lose performance than it lower temps making max boost more probable
