Practice air roll on slow mo 50%-60% game speed as a start so you can see it better and time it better while thinking.

If you want to go straight while adjusting slightly (in small/tiny circles/swings), then all you have to do is keep moving your stick in the same direction as the air roll (clockwise or counterclockwise) and move your stick with the same rythm as the rolling speed of the car.

if you want to adjust/tilt in a specific direction while air rolling (jumping off the ground and going straight forward and up, no turning left or right), then all you have to do is keep moving your stick in the opposite direction of the air roll (counter clockwise or clockwise).

if you just started, don't learn dribbling yet... Practice small controlled touches so you can stay slightly behind the ball rdy to block them if they challenge you and shoot towards your net.
But if they leave you with the ball you can do a hook shot or a small cut to the side then flick/ single jump pop the ball over them.

you're probably overrolling. Having good aerial control is using airroll effectively, not constantly. (basically dont go spinny spinny all the way)

if u're talking about freestylers, yes, they can do the spinny spinny effectively in a way that'll make the play flashier.
You can do pretty much the same things on kbm. The more you practice, the better.
If u're on pc and playing on steam, there are workshop maps. If u are on Epic, a few of the rocket labs freeplay maps could be a good start to practice
