Don't focus too much on flicks, a simple flip once you get under the ball can get the ball high up over any plat ballchaser.
Just know when to use them.

For aerials, focus on these:

1. don't go for aerial when you don't have to.
2. Lining up on the ground before jumping.
3. Saving your flip for powerful shots.
4. Popping the ball high with a fast aerial.

Hard to say can be for the specific touch they want or they are just in the habit of air rolling to much

I am not sure what you mean by what you said at the end about the same position you started.

But there's definitely a reason why you want to aerial and catch the ball with the underside of the car going with it to the ground again then shooting it or whatever you wanna do.
This type of aerial gives you more control and more threatening options.
it's not something you will see in lower ranks.

Depending on the angle they hit the ball it can go different ways so either they want a specific way to hit it or they are just overusing it

Some of them have did that for a long time and they are just used to it so they don't question it.
And some of them have rly deep analytical thinking about different ways to hit the ball more efficiently or they are pros (btw a pro like MonkeyMoon does very minimal air roll)

I don't see a reason for you to learn that.
You can get away with tapping air roll to adjust your position instead of 360ing
