I'd try and use more options than just crit/mast, on top of just using Patchwerk 5 min 1 target for general gear questions
However baseline it should not be lower, other than the fact that the increased mastery and crit is heavily outweighed by you losing haste (which should not be to this degree)

Don't worry about picking every possible gem however, it'll massively inflate the iterations and limit you
I'd recommend if you don't have premium, just to sim with crit/haste gems only, since they're in almost all cases very close to the rest of the combinations, and essentially always good stats

Haste/crit is however typically more often than not the most desired stats
Which is why I recommended just picking haste/crit combo gems
There are cases where, when you get more gear and options, you can recheck with more stats
If you want to min/max further
My warrior's neck craft is also haste/mast because it was what was best for it, when I made the neck
