The Wall is generally considered best for raid, with Thunderlord best for M+ right now.
If you were doing mostly M+ I would just hang tight until you can get Thunderlord, the power isn't that tough to get anymore.
Alternatively: hoard soul ash and cross your fingers that they don't nerf Reprisal from what it is on PTR right now.

It’s not a dumb question. I would install MDT (mythic dungeon tools) and follow whatever guides are up to date for the current affixes. You can usually find optimized routes on wowhead. As far as following them and doing the route properly or creating your own, it comes mostly with practice.

Same reason why Warrior tanks are amazing @ Huntsman in all difficulties; Movement and Spellreflect stacked with IP and Demo shout for each ripped soul. The soul comes out with 90% HP everytime - it's almost like an immunity

Correct. The 18 second uptime (with 2 second downtime (based on haste levle) of Shield Block, is pretty great for when you're actually tanking. There's a lot of moments where you can recharge Shield Block as he doesn't hit you 🙂

use raid immunities on the very first add spawns above 75% and the add spawn sub 30%

It will just make our already strong defensive kit even stronger.
In raiding it's more or less unneccessary as we you have 2 tanks so you have enough time for SB to recharge regardless and m+ favours more damage heavy tanks .

I suspect AM will get more favoured when (if) 9.0.5 Reprisal goes live. More Avatar has obvious synergy with a high-DPS legendary that also reduces the need for lots of shield block
also with more rage to spend to trigger AM

A lot of the early fights in CN, you'd be fine using AM
You'll be fine using AM in lower keys too but you'll take significantly more damage since block uptime will almost always be relevant in keys

You will end up running it a lot in M+ to get a good Scale, believe me. So get use to the layout and route.
Also if you haven't already done so, finish your Covenant Campaign and upgrade the gear to 197, and you will be able to go do M0/low M+/LFR Nathria and not bother with Heroics

The best tip I can give you for M+ is to get a static team and run M+ with them.
Other than that M+ really isn't particularly difficult, especially below +7. Just avoiding dealing with the negativity of your average pugger makes it so much easier.

The Wall is the best current all-round Tanking Legendary, as it's good in all Raid Bosses, M+ Bosses and good on Fort trash especially in dungeons with high-powered single target trash.
Thunderlord is good, but mostly on multi-target fortified weeks
Reprisal will - if it goes live as it currently stands on PTR - become the best M+ legendary for damage output though
