They can also drop from any kind of vault in the weekly vault, or you can change a piece of gear into the equivalent tier piece at the catalyst; there should be a quest near Valdrakken's plaza area that tells you about it
Side note on the catalyst part, you can catalyze any gear, but only Head, Chest, Shoulders, Hands, or Leg items actually have tier set effects attached to them. The other pieces only affect what type of stats are on there and appearance.

And it depends on what your specific use case is; the best overall is probably Dreadplates due to being both a strong defensive trinket and an offensive trinket
After that, most trinkets you'd want are mostly offensive trinkets unless you want or need a defensive trinket for any given reason. The former good trinkets are almost any kind of damage trinket you can get your hands on in raid, or specifically Anvil/Grieftorch (though Grief can get you killed if you forget to Shield Wall during or something), and the latter, after Dreadplates, you're most looking at Treemouth's, which can be farmed from Brack

I can't speak for Method, but both, WoWHead and Icy Veins should be up-to date properly.
Once you've done some initial reading, i also HIGHLY encourage you to ask questions here if anything needs explaining.
Guides are just a starting point and don't cover all scenarios.

I think it's just best if you dive in first with the class with Wowhead/icy/whatever else, then feel the gameplay. After that if you are confused on certain encounter can always ask something here, or post log if you want.
