Yes, you still want to sim.
Generally, the best pieces for survivability are the ones with the highest item level.

That also mostly holds true for DPS increase.

Our secondary stats are pretty close together, but we still prio Haste->Vers/Crit->Mastery.

Survivability comes down to proper play and dungeon/encounter knowledge.

Swapping between battle Stance & Defensive stance is also about your comfort level with the content you are doing.

E.g if it's a low key where the damage intake is w/e, stay in battle stance.
If it's some higher key where you're worried, swap to dstance.

Gotcha, I tend to stay in Defensive stance as often I see the healer struggles with healing the party, as much AOE is there, and many casts are not interrupted, so I just want to help out

Ideally once you get to the content that's challenging, you'd "stance dance" - e.g stay in battle stance, but when a ability comes that is magical/hurts etc, swap to defensive stance for the duration of it.

E.g the DHT tree boss grab.

And then after the grab, go back to battle stance.
