it's always possibly the problem, i've chucked out so many hdmi cables and gone through so many.
But to expand on tidus's point. And from what i've looked up about the display. It appears to be a 8bit display technically, it may be using FRC to an extent but frankly looking at the details i could find, it doesn't even support proper chroma 4:4:4, which explains why you're only seeing 8 bpc and 4:2:0.
It's basically a bottom tier tv, your older tv likely was a better quality model.
firmware update?
Connect the Hisense to the network, go to the menu, and perform a software update...
In the submenu, you have the option to enable or disable AI...it should be disabled by default.
If that doesn't help, contact Hisense Support.
I updated the firmware, I have the HDR enabled on the HDMI mode, and AI disabled.
I can't use HDR or Dolby Vision in Windows, but HDR seems to work in Linux.

Otherwise, you can call the Hisense technical department in your country, and the technician will check your TV remotely.

To do this, you have to call Hisense Tech and connect your TV to the internet.
The technician will then tell you everything... (He will then give you a code that you have to enter, and then you'll see what he's doing.)
