This is exactly what I did:
(1) get to the point where everything is complete up to and including the community objective (2) enter and exit your ship on the anomaly to create a restore point (don’t go back in your ship after this). (3) hand in ONE of the options to the construct. Claim that reward in the menu (4) load the restore point (5) go to the quicksilver merchant to confirm it’s unlocked (6) trade in the OTHER item to the construct and claim that reward from the menu. (7) complete the last of the expedition. All rewards should be unlocked on your account.

So, I chose one helmet, reloaded the save, chose the other one. Both were available immediately on the QS shop. Didn't claim them, completed the milestones, and then only one became available. Not sure if that was intended. The available one wasn't even the one I had picked last...

Anyway, just re-did all the process, this time claiming the rewards on the QS shop before completing the milestones, and now I have both available in my main save. It seems to have worked.

Short answer: information about past rewards are stored locally and unfortunately... it seems the file with the information gets bugged on many occasions

I was able to get both on xbox, I just reloaded at restore point and did the mission again with the other option

If you are on PC there's ways to fix it... on console, unfortunately, I don't see a way

• log back on your expedition save
• get in an out of your ship (in the anomaly)
  (should update your "restore point" save
• go to the robot, turn in seed, claim helmet in expedition rewards
• reload your "restore point" save you made at your ship (not the "auto save" that just updated)
• go back to the robot, turn in the atlantidium thingy, claim the other helmet in expedition rewards
• go back to your ship, get in, get out to make another "restore point" save and finish your expedition
• switch to your non-expedition Main NMS Save
• go to the anomaly, talk to expedition-rewards vendor, claim both helmets

Good to know - I just saw some people having trouble getting it to work there. Idk how consoles overwrite and back up saves (similar to globalprofiles/autosaves/restorepoints, etc)

That's what I did, and seems to have worked
I lost a lot of rewards from previous expeditions when going from PC to Mac (although I hadn't played NMS in months, so there's that)

I'd add, just for safety: don't complete the milestones before claiming the rewards on the QS shop

I mean, don't click on them on the expedition menu
