There is no way to do so without reverting your version of No Man's Sky to before the version that made that creature extinct

which would be Origins in 2020, I don't believe there have been any fauna extinction updates since then

Only Flora and Minerals, which display in the fauna section when extinct due to a bug

There are some flying creatures that can be interacted with and adopted, but the high flying ones like big birds/lizards and flying worms can't, without mods, save editing or just getting an egg from somebody who has them already

have also seen conflicting info about how increasing size affects land creatures - some people claim making them bigger makes them faster but only up to a point and then they get slower, some people claiming they always get slower when made bigger, some people claiming that it depends on the initial size of the creature, so you need to find a small creature then make it big to get a fast creature

They can’t be tamed without a mod, or made to be a pet without a save editor, you can trade with someone that already has them as an egg.

They are pretty fast good for covering a lot of ground, because they aren’t intended as a pet interaction is tedious once the pet is moving, need to interact once summoned.

The thing I've found that works best is going to uncharted systems, I've had the most luck with red so far, but that could be purely coincidental

Oh, you should be able to interact with it in vanilla, unless your worm is technically a Sandworm, which are not intended to be companions and therefore lack most functions that companions have (like interactability)

Sandworms are the colossal ones that burrow into the ground and jump out normally, they do not function properly as companions at all

For pets they can take anywhere from 1 - 10 days how long it takes is random.

The creature you have is the result of a save edit or mod, it is not intended to be a pet, they will naturally fly away and despawn or just do circles around you, if you want to interact with it you need to interact with it as soon as you summon the pet.

I joke, but not really, it depends what you like, you have beetles, butterflies saucers, fart fish things the like, these creatures are low flying they stay relatively close to the ground, beetles tend to be the quickest at larger sizes, butterflies win my vote for pretty af.

Save edited creatures consist of flyinglizards (image above) and flyingsnakes both are very quick, faster than creatures you can tame in game and I personally adore some of the colour combinations possible for the birds and worms.

I'm not sure, they seem uncommon but I've found them regularly on planets in purple systems, and I had one system with 2 planets that each had 4/5 of their species being these, so they aren't especially rare or I've had good luck

I used to do a lot of species hunting, mostly focusing on just going between planets and scanning each one, I'm only now getting back into the game and the real trick is just visiting a lot of planets

Since you can't interact with any fauna while airborne, it makes it a bit easy to tell which are literally impossible and which are adoptable

High flyers aren't impossible because of that, even if you got a grounded state up there they wouldn't show an interact prompt

Different animals have different drops when you feed them, and you can build both an auto-feeder and auto-harvester in a base, so if you find a planet with a common animal that yields milk, you can set up those to farm milk, though you need to be at the base for those to function. Tamed animals can't be harvested from as well, so you'll want to find natural spawns
