I bought pickles once that were called Baby Wholes
what's really nice, and I find it best with the results of pickled red onions.... when you finish the pickles, strain the juice, then add sugar, bring it to a simmer for a bit, then thicken with corn/potato starch. You'll have a sauce that taste just like the pickles (the more pickles you had backed into your jar, the more it taste like the pickles instead of vinegar. It's what I use when making sliders so they stay nice and neat and not messy

a Quick pickle is about 15 minutes for say cabbage. For those, you can "shortcut it" and get about 80% quality from doing a 20 minute simmer. But usually you are looking at 2 days to 2 weeks

yeah I do the salt-sugar-vinegar together, and put the cucumber in that
just make sure if you are using water, you use at least 50% + a splash of vinegar, so there is always more vinegar than water

trying to cheat and convert a bottled sauce (i.e. the teriyaki i used) into a "pan sauce" that is more meaty/rounded for pouring on rice etc.
last time i used shortening 😮 😄
use water or stock
put the sauce into a small bowl. add water in little bits while stirring
once it thins out but is of one texture, then there you go
then you can heat that up in a pan with whatever to give more flavor if you want (or use a nice stock to bypass that)

yeah, I'd go with a normal chicken stock or water if making it for salmonm
just make sure you add the stock/water TO the sauce, not the other way around
that way it incorporates much better and you can control it to the thickness you want
go slightly thinner than you want, when you heat some of the water will come out and it'll thicken a bit more
you can also mount it if you want. When you have liquid mixed in, heat it up and add some butter
stir the butter in as it melts, make it a rich teriyaki
i think that was what i was trying to achieve with the shortening

yeah google "mounting a sauce" that should explain a bit more how it works
so sauce > add water > heat > add butter like a butter sauce
that's what I would attempt at first
yeah, add the butter once that mix just gets warm
and it'll slowly incorporate into it

oh and a neat trick of old, is a rolled naked roux when doing a pan gravy for chops
you take butter, season it with herbs and spices, roll it into a ball, then roll it in flour
When the chops are cooking, add some beer, stock, whatever, then when that simmers, add in that butter flour ball
it'll over time melt and thicken it all into a niceness

but next week I am getting creative, going to do the whole poached Turnips again, but this time, coconut milk, a raspberry reduction, and the water from re-hydrated arbol chilies

i do use capers but i also add tomatillo salsa or salsa verde and i make sure to crisp the edges of the tilapia with longer or higher heat

i bet deaf chef has ideas but my thoughts are to sautee mini diced apple in butter and sugar and cinnamon just enough to meld but not disintegrate them, then spread them out on a cookie sheet and freeze them (or in batches)...i would find some way to get the whiskey into a caramel after the caramel stops boiling (or buy caramel sauce and heat it just enough to incorporate the whiskey)
i would use a vanilla base and add the chilled sauce and frozen apple bits right at the end of the churn
