Thena, depends on what you are having it with. I usually love pepper, five spices, garlic salt, onion salt. Be careful tho, needs very little to give mushrooms flavour.

so i would put a pot on low heat, add the rosemary dry and toast it for about 30 seconds
add butter or ghee and toss in the sliced mushrooms, with salt and pepper
sautee the appropriate amount
add beef stock, bring to a simmer
mix 3T of beef stock with 1T of cornstarch
drizzle in the cornstarch while stirring, simmer for 2 min
But, I suspect by the time I got there you'd be back indoors anyway
just drive the gloves over

it depends on what kinda mushroom sauce you going for, regardless you need to switch up steps 3 and 1
you gonna want to dry-sautee the mushrooms and seasoning
they'll release liquid after a bit, then re-absorb it
the re-absorb phase is where you'd add the butter if you want or soy sauce or anything
If you are going for a really serious mushroom sauce, take the mushrooms when done cooking up that way (or just roasting them), pureee them, then back into a pot add a splash of stock
beef, chicken, whatever
let it simmer a bit and develop, shouldn't need to thicken
you can leave it near mostly mushroom puree for thickness
so basically you use the stock to thin it out to the texture you want
as opposed to adding then thickening after
also, depending on how you using it, some cream won't hurt
all makes sense, thena probably made her dish already so it's just an intellectual exercise for me

A general though for many sauces is try to build it up in a way where you need to thin it rather than thicken it if possible, that way you can keep your primary flavor as forward as possible
you can also tone it down by thinning it out to the point it lesser, then thickening with starch slurry
That is a solid tip! Ty
though, if you are doing a sauce that is something you can't really puree, yeah you gonna wind up needing to thicken the slurry way. And, IMO, avoid using a roux (flour/butter) for thickening unless you doing a red/brick roux. Flour takes ~20 minutes to properly thicken, and can affect flavor (though in a positive manner for a brick roux). A starch slurryy will thicken quicker and not affect flavor.
