Today I got up at 0830; and I’m going back to work Tuesday night at 2330
So by then I have to entirely flip my schedule

@tired stump The issue with EVOO is it has a really low smoke point, but normal olive oil has a really high smokepoint
only "standard" oil higher is Avocado oil
but if you trying to replace Canola, Vegetable oil is your closest
and if you are making a sauce that uses oil (like say bulk amounts of Buffalo Sauce), use veggie instead of Canola because Canola can affect smell sometimes

You know what was one of the leading causes of heart disease the last decade in the US was? The Neo-Paleo diet. People cut so much salt out of their diet they were giving themselves heart damage
A diet of cheese burger pizza can't be any better though. Just cuz there are other aspects of the ignorance of healthy eating in the US, this particular aspect should not be ignored.

Basically chicken fat is loaded with oleic fatty acids where your red meat and fishes are loaded with linoleic fatty acids
people are made of red meat, just fyi
love the flavor of chicken fat though, and use it when I make eggs
but really it don't matter what you eat unless you have personal health issues. If you eat a variety of foods in moderation, you'll be healthy
There are some exceptions for various medical reasons (like why Ican't survive off Vegan diet, or some people with legit sodium issues)
