Dairy free coconut butter chicken with Yemen curry base over egg noodles with chicken skin bacon for texture. Ye gods that feels hipster to describe.
@zealous crown So instead of one of the normal curry bases for butter chicken I used the Yemen spice mix Hawaij, which is pretty similar honestly. The one I have on hand is made from Garlic, Coriander, Allspice, Cumin, Black Pepper, Turmeric, Cardamom, Ginger, Cinnamon, Cloves, Nutmeg.
Though technically even calling it a curry is.. a regional thing
Well, anything with a bit of kick would be considered a curry, so you got coriander and all spice in there. Heh, defo a curry.

Then they got specific with garam masala, which is a spice mix that is also spicy

There are a few good documentaries that go into the misunderstanding of curry, and the efforts to change that
I mean the word originally literally meant "sauce for rice", and back in early 1600s IIRC, the EIC would trade for what translated out as Curry Powder but was really a sauce mix, any number of different kinds.
Then the Brits plunder India, bring all the spices back, can't figure out what to do with them, so they started doing them in that manner
brought that back with them to India, had their servants prep that and the Indians to some extent incorporated some of those into using various local spice/ingredients
and then, partly because of racism, mostly because of lazyness, a lot of traditional Indian dishes died out, and many that remained got tossed under the ubiquitous "curry"
i always thought it was weird that you add garam masala to things when there are already a bunch of things in it
@tired stump This of it this way. The curry powders and garam masala, they differ by brand, by household, and will have multiple types. They are made up of not just different ratios, but different preparations. The cardamom might be toasted before ground, might be raw, might be a 3:1 ratio to the cumin (which also might be toasted or not)
so you have all those ingredients in it, then you add the mix to fine tune (or rather the other way around depending)

If you are doing a flavor heavy chili that isn't focused on the meat, use ground whole pork shoulder/butt.
oh it lets everything just shine
and is a great base for a Japanese/Asian profiled chili

Same with sugar. Hence why some foods commonly prepared in various cuisines allow for raw eggs using those ingredients, which are reducing the likelihood of bad bacteria. Oh they also mention spices like oregano and thyme.

What we used to do was use farm eggs for quality and in some of the same dishes use commercial raw for safety

not all of those came from eggs first off, it just that's what gets checked off often when trying to figure it out and can't single out a cause. Second off, almost all of those were from farm eggs

@zealous crown I just eyeballed this by using chicken stock and mixing in a bunch of ginger paste, some soy sauce and shaoxing (Chinese cooking rice wine)
Usually I'd do it by making a normal chicken stock, but addind a ton of cubes of ginger

The lazy "ginger" broth is basically 3 parts chicken stock, 1 part soy sauce, up to 1 part shaoxing or mirrin, then as much ginger as I feel like adding and letting it simmer
