Imo it was a little acidic so if you want to use less tomatoes that would probably work
You can also help cut that by frying the tomato paste for a minute or two before you pour in all the other ingredients

Pressure cooker can make things faster, but in general I stick on the stove so I can baby it as needed, or in the oven for both some of the extra roasting plus even cooking
Depends on the flavor you want, roasting those veggies will make it a much richer soup
Depends on the soup, though depending on the veggies and size of your cuts, you might want to pulse them a few times in the blender when they done

Given your base, the roasted veggies and all, you should be fine in the IP. Most other kinds of soup I much prefer on the stove because they tend to need more adjustments as the time goes by

I cooked 4kg roast lamb yesterday and it was super fatty :(. 7hr cook so it was melt in your mouth but I was dissapoint how fatty the meat was, I should have injected it not just put a rub.

I prefer a Toum with Elephant Garlic in place of using mayo usually
I heard of elephant garlic for the first time this morning, and now someone mentions it.
I grew up in a garlic heavy place, so got to experience all sorts of variety
Yeah, Elephant garlic is among the weakest (might be the weakest in fact) but that's what makes it great for an all-purpose Toum
you use garlic instead of egg to emulsify the oil. Usually that the garlic sauce you get with like kebab, donner, pretty much every lebanese meal
but using Elephant garlic makes it basically neutral
and vegan
nice.
and as nice as it may seem, avoid using russian red for that... it basically becomes weaponized garlic sauce at that point

@molten crypt psh, no such thing. Because of the ‘rona, govt is trying to stimulate hospitality as restaurants were shut for 3-4mo. So whole of august 3days a week, the govt pays for half of your meal. Everyone’s eating out every night now.
