Don't think so. That game focuses on a slightly different target audience.

Starfield is a single player roleplaying game whilst NMS is a survival building adventure mmo-lite live service(minus the crap from those)

Of course players of both games will likely play them both. Doesn't really mean one would replace/kill the other.

Usually bethesda games have a lot of side content and with Skyrim for example the side stories are a lot more interesting and impactful than the main campaign. Although since the game isn't live service or online, people will eventually run out of things to do. But that's after a lot of time of course.
