You might want to look into X series if you want something very open ended. Latest one was X4 I think. It lets you be from a simple fighter pilot to a fleet commander or create a financial empire (including building space stations, manufactuiring, logistic fleets etc etc etc) Very good game, but you can drown in details.

If you really like to build and tinker with stuff and not afraid of really going deep into it I would look into Space Engineers and/or From the Depths.

Yeah, the X series (starting with X Beyond the Frontier and up to X4, as of now) has a fairly steep learning curve. I have well over 1000 hours on all the games, the most on X-Tension, sequel to X Beyond the Frontier.
