when i have time to fix myself up a nice breakfast this is my go to. I might switch out the mushrooms for some sautéed greens on occasion

- Homemade Olive & Rosemary Focaccia bread
- Soft scrambled eggs with salt & pepper
- Pan seared vine tomatoes
- Smoked salmon with a lemon & dill
- Sautéed spinach & garlic finished with balsamic vinegar
- Crimini mushrooms, thinly sliced, sautéed with garlic & parsley
I be going a little extra for breakfast sometimes, but it is the most important meal of the day for a reason 
haha well that saying was invented by food companies to sell breakfast cereal so just eat whenever you feel hungry

Low heat and the egg doesn't need to stay in the pan for too long
If your stove has knobs with numbers on them, you're gonna want like 4 or 5
Doesn't has to be flipped or careful flip?
If you want really soft yolk then trying to flip it will more often than not break the yolk
What I do is put a lid on the pan and let the steam cook the top of the egg
Again you only need a short amount of time
Leave the lid on too long and you'll get a solid, fully cooked, yolk
Put it in a frying pan

You can also drop a tablespoon of water into the pan and immediately cover it with a lid
It’ll steam the top part of the egg without you having to flip it
maybe a bit more than a tablespoon depending on how many eggs + size of the pan
another way is to keep spooning over some of the hot oil from the sides of the pan on top of the egg. That will also cook it, albeit make it taste a little more oily
That could work nicely though if you’re using butter
Both these methods are far more controllable than flipping it and you can make the yolk as runny or solid as you desire
I make the pan fairly hot so the egg starts setting the moment it touches and doesn’t spread everywhere. Then I add in 1-2 tablespoons of water and put a lid on
Cooks the egg in half the amount of time without overcooking it and leaves the yolk still runny
