I finally had a teamate that felt realistic always under 2 seconds chasing me for P3 usually I'm in the back

They are all understeery and stable af for the most part. Just use a variation of that for most high speed tracks.

If you lose the rear on some tracks raise the rear wing, if it's a track that doesn't have much mid-high speed corners you can lower the front.

If you spin out on slow corners raise the front springs and lower the rear (Japan I use like 5-3) and if you spin out on fast corners do that with the roll bars

There are F1 cars stock in the game like the f2004, SF70H, sf15-t

But the mods are a whole lot better

You can't do it on the middle of a round.
