That's just a flaw in the way you drive then. I've done over 600 hours of league racing on pad, and if you drive differently in clean air with no one around you vs when people are on your tail end or just in front of you, you will find some problems. There are mitigating circumstances, but in general if they're just putting pressure on you from behind, all you really need to do is just position your car around the middle of the track, and the drive the way you normally would be, until they try for a move

Okay well I gave you a tip and showcased a way to smoothen your steering inputs. Braking and throttle is something you'll have to trial and error with, because everyone has a different way of modulating that on a pad. I personally push a small piece of skin from my pointer finger in between the gap of the trigger and the chassis of the controller, and then modulate using the bottom part of the distal phalange on my finger.
