Flight assist affects the tendency of helicopters (and the condor/f35 in VTOL mode) to level out. Disabling the option just makes the effect less noticeable, particularly compared to bf4

In bf4 you could pitch down and stay that way for attack runs

In bf2042 you have to keep pitching down to get the same effect

Personally I think it's kind of a fun minigame to level out completely using the 1st person UI
