Probably because it would be too much of a strain on the client and/or the servers. The servers are already tracking destruction, fortifications, players, bullet trajectories, stats, etc.

Call of Duty obviously is not a taxing game on a client/server, so they can afford to put in a kill cam without ruining performance.
