1 Rotisserie Chicken (try to get a seasoned/flavored one, like Garlic & Herb)
1 tablespoon of "jarlic"
1 bag of frozen peas and carrots
1 can of corn drained
2 cans of cream of chicken soup
3 dollops of sour cream
1 very big handful of sharp cheddar cheese
1 full sleeve of Ritz crackers
2 tablespoons of stick butter
1 frozen pie crust
2 teaspoon ranch powder
2 teaspoon chili powder
1 tablespoon fresh cracked black pepper
Salt to taste. NOTE: this is important, as your chicken will already be seasoned, as well as your ranch powder and cream of chicken will be heavy with sodium).
DIRECTIONS
Preheat your oven to 400 degrees F.
Shred a rotisserie chicken; use whatever part of the chicken you like - I used leg and thigh meat, with the skin.
In a large bowl, combine 2 cans of cream of chicken soup, 3 dollops of sour cream, the bag of frozen peas and carrots, the drained corn, your big handful of sharp cheddar cheese, and all of your seasonings.
In your pie crust, add the mixture. Bake at 400F for 45 minutes.
While this is baking, get a ziplock bag and add the sleeve of Ritz crackers. Crush the crackers into smaller pieces. Take your stick butter, and cut off 2 tablespoons into small slivers - you will be putting this on top of your pot pie.
When you have 10 minutes remaining on your pot pie, take it out of the oven, and add your crumbled ritz crackers, small tabs of butter, and a small handful of the sharp cheddar cheese. Bake for the remaining 10 minutes.
