EMF in the atmosphere is way too high, causes electronics and power to go haywirr and/or explode, nonmagnetic and nonconductive matetials are unaffected
EMF will work for my second planet idea where everything is wetware and requires exploiting the brains of the biter analogs for circuits
it would work for both but require different solutions
you could also say "atmospheric conductivity is too high"
So would you add alternative recipes for current machines that use wetware circuits, or would you add new wetware-ran machines

In response to the question of how copper corrodes but iron, stone, etc don't - AFAIK copper is more easily corroded by ammonia than the other materials listed. So presumably an atmosphere that was rich in ammonias would prevent copper from lasting. Obviously in a 100% real-world situation, ammonia levels that high would introduce a whole host of other problems, but it's a starting point for a restriction that's rooted in lore and real-world science 🙂
How about if the planet is under a constant geomagnetic storm
The constant fluctuations in the magnetic field induces volatile currents in wires, melting them/causing surges

make water by combining chlorine gas and natural lye deposits
then find a usage for the byproduct sodium hypochlorite too
