Well, there is really no way the game works by a random quality from silver to gold. If your lucky and you get a gold fish you must catch it perfect and it puts it up 1 quality!

So basically You get an iridium fish when you get a perfect catch on a gold fish. Since the 1.4 update, once you get a perfect catch, the quality of the fish goes up one. and the chance of a silver or gold fish is random.
