Hard one to answer but I believe the people who have played this game for hundreds if not thousands of hours culminate a variety of short & long term goals for their file(s).
Mods enhance, breathe new life into the game for sure but you really need to find what you love about it to keep going. Get all achievements, make $20mil, decorate the map, mods mods mods, challenge runs, multiplayer etc. Don’t force yourself to enjoy the game however.
