at level 5 and level 10 u can select professions that allow for u to sell fish at a higher price (u can also choose other professions with other benefits, and in mid to late game u can also have a way to change ur profession, nothing is permanent)

Farm type has no impact on spring oninions. It's just rng. You're more likely to get them with high daily luck (not luck buffs).

have you gone around and spoken to everyone yet? it's the easiest way to get acquainted w the different areas on the map. read your journal (exclaimation mark below ur money), check out the quests, those can also help guide you along etc.
NPCs have likes and dislikes, u can talk to them and gift stuff they like to increase friendship - u can do that by trial and error, or u can read the wiki, it depends on your playstyle
it's a game that you can play at your own pace, so there's no worry to rush anything esp. if this is your 1st playthrough
