you only need to catch one of ecery fish in the game for that reward.
harder fish will feel easier as your fishing level increases as fishing level increases the size of the green bar.
though year round mountain lake tends to be either the best or second best spot to fish for profit and most fish there are easy.
some of the hardest fish to catch are lava eel, scorpion carp, octopus, legend fish, glacier fish.
eels, catfish, woodskips are hard at lower levels but easy once you have a high fishing level.
some fish can only be caughe using crab pots. these are all the crab pot fish which some only appear in fresh water and others only in salt water.

There's not really a right or wrong in terms of upgrade priority.
Sooner or later you have them all maxed and it boils down to personal preference

If you do massive farming without sprinklers and rarely any mining you might want to go watering can first.
Although getting the resources for that one would take ages so..

If you use your bomb effectively they pay for themselves, 4 copper and 1 coal is very cheap for how good it is, you just need your pickaxe to mine some blocks. After you finish your mine, the skull cavern is even more profit per bomb. Also level up mining faster

You unlock the crafting recipe at mining combat level 8
