Processing always increases value, so if you can process all then do so

If you're limited by machines, prioritize processing the low value crops

Processed foods are usually basic quality so it doesnt matter what you put in, and they usually make profit even if you put in gold quality items. But if you have too many crops to process, you can just sell gold quality ones and leave the rest for processing
