I understand that getting to 10 hearts with a non-datable villager means the relationship level will never drop, but how does that work with marriage candidates? Will they stay at the max of 8 forever if I decide to not go the relationship route with them?

Processing is always worth. People just sometimes sell high quality crops and process the base ones if they need money right away or if they don't have enough processing machines, but in 99% of cases, processing is always more valuable

With crops it's always more valuable, just not every crop is exactly worth processing
