I go coop first, then barn, then big coop, then big barn, then go to deluxe barn. I'll get one each of duck, goat, pig, and sheep early if I'm running low on cash. Pigs especially can be pretty expensive.
I go with the deluxe barn because it covers sheep for the wool and pig for the truffle oil needed for the artisan bundle.
Some folks like choosing the fruit bat cave when the choice is offered because it makes the Artisan bundle easier with fruit, but I've never had a problem with choosing mushrooms, which I always do.
Check the Trading Cart on Fridays and Sundays in Cinderssap south of your farm. She can often sell items required for bundles.

Note: some people like the deluxe coop for rabbits to get their wool, but sheep will produce wool earlier than rabbits. And you need the deluxe barn for pigs anyway.

It takes getting used to. I'm still not great at fishing, after years of playing. I use every buff and trick at my disposal to make it easier. If you're having trouble catching anything early on, use the training rod. It increases the bar size to level 4 equivalent. You won't be able to catch anything but regular quality fish, but something is better then nothing. And those fish you catch will give you the XP to raise your level and make fishing easier.
It does get a lot easier at higher levels and with better equipment.

I don't believe it's beneficial to burn through so much coal smoking fish early in the game. I need my coal for smelting ores to craft kegs and other things that will make me a LOT more money than fishing.
The math on break-even point in year 2 and beyond, when coal costs 250 each, with both Artisan and Angler, is 225. I set a personal minimum of 300 to make it worth my time to smoke. I forget the break-even point on year 1 fish, but it's close to 100. That leaves out the breams and the chubs and the perches that are the staple of Riverlands fishing.
Fishing is still a poor man's hobby, despite all CA did to beef it up, and there's no numbers you can throw at me that will impress me. Spend all day catching lava eels? Done it. It was fun and made some money, but it was still chump change by my standards.

I'm using the smokers. I just only use it on the more expensive fish. I'll fish some of my fish pond fish out for smoking, dropping their numbers from 10 to 8. Two lava eel ponds, two blobfish, and a single sturgeon pond. I even dropped down to 270 to smoke a stack of some gold quality fish I had about 30 of.
I get a free evening and I'll fish for lava eels, catching gold quality ones every time.
So it's not like I don't use the smoker. I just had no use for it early on because I had better uses for my coal.
